Hello! Popping in to talk about one of my favorite weeknight dinners— quesadillas! They’re so easy to make with whatever you have on hand, and they’re QUICK. Both of those things make them a weeknight (or any night) win in my book.
Pictured above are the quesadillas I just ate for dinner about 5 minutes ago. Tonight I made them with shredded sweet potato, red onion, pinto beans, and cheddar cheese. Always with salsa and a big dollop of sour cream. Always with lots of lime. Sometimes with avocado. Always with a pile of lettuce on the side, which I simply season with salt & more lime juice.
Any combo of the below would work! I hope this is inspiring for you as a simple addition to your weeknight repertoire. Comment with any favorite combos you might have… I’m always looking for new ideas!
Veg — Shredded sweet potato, shredded Brussels sprouts, onion, shredded kale, spinach, etc.
Cheese — Cheddar or Monterey Jack
Beans — black or pinto
Toppings — Salsa, avocado, sour cream, lime juice, cilantro, cotija, radish, etc. etc. etc.
Here’s my method:
I usually start some diced onion (red or yellow) in olive oil over medium-ish heat and let them soften before adding some veg and seasoning with salt. I also usually add some spices like chile powder & cumin. Sauté everything until soft and starting to lightly brown in spots.
If I’m including beans, I’ll either heat them in a separate pot or just toss them in with the veg over the heat until they’re warmed.
In a separate pan (or in the same one, wiped clean), I heat some more olive oil and add a couple of tortillas (usually corn). As soon as they start to bubble a bit, I flip them, sprinkle shredded cheese over each, and a big scoop of the veg mixture (you might not use all of it, but leftovers make your next round of quesadillas even easier :)). Fold each tortilla in half with a spatula and cook on both sides until nice and brown. Some of the filling spills out sometimes and gets crispy and I love that. :)
Bonus: Fried eggs are very nice on top.
